Utopia Cider
Ivo and Eva did not choose the name for their small cidrerie at Sudkův Důl by chance. They are trying to achieve the utopian ideal of pure and natural cider. And they are doing really well so far. Apples from family orchards in the area are pressed after harvest, the juice goes into older 225l oak wine barrels. The must ferments spontaneously and ages until the next harvest, i.e. the whole 12 months, and matures at its own pace. Without any further intervention, cider is bottled without a pumping, filtration, pasteurization or additions such as sugar, acids, tannins etc. Each barrel is a small universe of three hundred unique bottles. Utopia ciders are closer to the wine than to classic cider by their nature. In the year 2018 they also experimented with sparkling cider for the first time. Very special is also super-sweet and acidic cider Patience.
